The Kolbászfesztivál originated in Békéscsaba, Hungary, to highlight the town's long-standing traditions in pig farming and sausage processing. In 1996, the first event was established around the local sausage, which is considered a successful and popular product. Organizers decided not to invent a new tradition but instead shape the festival around the existing sausage culture. The event included pork slaughter, a food industry exhibition, a market, and cultural programs featuring folk dance and gypsy music.[1]
The festival quickly became a genuine public celebration embraced by the entire city. It was well-received by tourism professionals as a potential attraction and by the meat industry as a marketing opportunity for a traditional Hungarian product. To ensure stable organization, the founders created a sausage club to serve as a civil background for the festival. This club allowed them to join professional organizations like the Hungarian National Gastronomic Association and the Hungarian Tourism Association to learn and build stronger foundations for future events.[1]
